This quick salad is made with ingredients you most likely already have on hand. It only takes a few minutes to prepare and goes well with grilled chicken or barbecue ribs. Especially with grilled corn on the cob on the side!

Servings: 4 (1 cup each)

Ingredients:

  • 1 cup soured cream or mayonaise
  • 1 tablespoon lemon juice
  • 1 large cucumber (Normal or English)
  • 1/2 teaspoon dried dill
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 red onion

Instructions:

  1. In a mixing bowl, combine the sour cream, lemon juice, sugar, dill, and salt to make the dressing. Set aside the dressing.

  2. If desired, peel the cucumbers. Cucumbers and red onions should be thinly sliced.

  3. In a large mixing bowl, add the cucumber, red onion, and dressing.

  4. Allow the salad to rest for 5-10 minutes before serving.

How Long Will It Keep in the Refrigerator?

Creamy Cucumber Salad will keep for several days if kept cold and covered. It tastes best when it's fresh, but it may be easily refreshed. Add some additional crunchy cucumbers or perhaps some minced white onions if you like!

To Prepare Ahead

This recipe can be cooked 4 or 5 hours ahead of time for the finest flavor, and the cucumbers will stay crisp! If you want to make it ahead of time, slice the cucumbers and onions and combine them with the dressing right before serving.
