Fish curry and eggplant Recipe

The fish and eggplant curry is simply delicious with a blend of flavors that will surely delight your taste buds.
  1. 1 kg of fish
  2. 1 onion
  3. 3 cloves of garlic
  4. ginger
  5. 3 tomatoes
  6. massala
  7. 1 clump of cotomili (fresh coriander)
  8. 3 eggplants
Cooking time: 40 min For 4 persons
  1. Clean and scale the fish.
  2. Then cut it into pieces.
  3. Marinate the pieces of fish with salt and pepper.
  4. Then let them cook in a frying pan until they take a golden color.
  5. Once the fish is cooked, remove it from the pan.
  6. Cut the eggplants into slices and marinate them with salt.
  7. Fry the eggplants and after about 3 minutes of cooking, remove them.
  8. Let the onions cook for 1 minute.
  9. Add garlic, ginger, tomatoes and masala and cook for 2 minutes.
  10. Add the eggplant, fish pieces and 50 cl of water.
  11. Cook for about 25 minutes.
  12. Finely chop the cotomili and decorate the dish.
Serve your fish curry with white rice and sweet potato chutney or with faratas.
