A Traditional Coleslaw Recipe

This is the best coleslaw recipe, ideal for parties and summer potlucks, and it's incredibly easy to make.
  • You only need a few ingredients, most of which you probably already have on hand.
  • To make it even easier, combine green and red cabbage or a coleslaw mix.
  • It only takes 2 minutes to make the creamy coleslaw dressing.
  • This is ideal for parties because it is best made ahead of time.

Ingredients for Coleslaw:

For the Slaw Mix:

  • 1 large head green cabbage, about 3 1/2 pounds, finely shredded on a mandoline or by hand (see note)

  • 1 large red onion, finely sliced on a mandoline or by hand

  • 1 large carrot, peeled and grated on the large holes of a box grater (see note)

  • 1/4 cup roughly chopped fresh parsley leaves

  • 1 cup white sugar

  • 1/2 cup kosher salt

For the Dressing:

  • 3/4 cup mayonnaise

  • 1/4 cup apple cider vinegar

  • 2 tablespoons dijon mustard

  • 1 tablespoon freshly ground black pepper

  • 3 tablespoons sugar

Instructions to prepare Coleslaw:

  1. In a large mixing bowl, combine cabbage, onion, carrot, and parsley, leaving plenty of room to toss (you may have to use two large bowls if your bowls are not large enough). Toss with the sugar and salt to combine. Allow to rest for five minutes before transferring to a large colander and thoroughly rinsing under cold running water.

  2. Rinse the mixture and spin it dry in a salad spinner. Alternatively, place the mixture on a large rimmed baking sheet lined with a triple layer of paper towels or a clean kitchen towel and blot dry with more paper towels. Set aside in a large mixing bowl.

  3. For the dressing: In a medium mixing bowl, whisk together the mayonnaise, vinegar, mustard, black pepper, and sugar until smooth.

  4. Toss the cabbage mixture with the dressing to coat. Season with additional salt, pepper, sugar, and/or vinegar to taste.
