Napolitaine is a delicious dessert that consists of jam sandwiched between two shortbread biscuits made with flour and butter and topped with a coating of pink icing.

Napolitan Mauritian Cake Recipe

Ingredients:
- 150 grams of semi-salted butter
- 300 grams of Flour
- Strawberry jam
- 300 grams of Icing sugar
- 50 grams of water
- A drop of pink food coloring
Preparations:
Baking the cookie :
- Preheat oven to 180°C.
- In a bowl, mix the butter, salt and flour with your fingers.
- Then use the palm of your hands to knead and form a ball with the dough.
- Place it between two sheets of parchment paper and roll out with a rolling pin (about 1.5 cm).
- Cut out small circles with cookie cutters or a small shot glass.
- Place the circles on the baking sheet and bake for about 15 minutes.
- Let cool on a wire rack.
Assembly:
- Put a little jam on one cookie and stick another on top, like a sandwich.
Icing:
- In a saucepan, mix the powdered sugar with the milk or water and coloring until you get a good, thick consistency (a bit like Nutella) and heat over low heat, stirring (1-2 minutes).
- Drizzle over cookies and let dry.
