Napolitaine Recipe

Napolitaine is a delicious dessert that consists of jam sandwiched between two shortbread biscuits made with flour and butter and topped with a coating of pink icing.

Recette Napolitain, Mauritius

Preparation time: 30 minutes

Cooking time: 15 minutes

Servings: 10

Ingredients:

  • 150 grams of semi-salted butter
  • 300 grams of Flour
  • Strawberry jam
  • 300 grams of Icing sugar
  • 50 grams of water
  • A drop of pink food coloring

Preparations:

Baking the cookie :

  1. Preheat oven to 180°C.
  2. In a bowl, mix the butter, salt and flour with your fingers.
  3. Then use the palm of your hands to knead and form a ball with the dough.
  4. Place it between two sheets of parchment paper and roll out with a rolling pin (about 1.5 cm).
  5. Cut out small circles with cookie cutters or a small shot glass.
  6. Place the circles on the baking sheet and bake for about 15 minutes.
  7. Let cool on a wire rack.

Assembly:

  1. Put a little jam on one cookie and stick another on top, like a sandwich.

Icing:

  1. In a saucepan, mix the powdered sugar with the milk or water and coloring until you get a good, thick consistency (a bit like Nutella) and heat over low heat, stirring (1-2 minutes).
  2. Drizzle over cookies and let dry.
